Introduction
Chicken in Hot Garlic Sauce is a classic Indo-Chinese favorite featuring crispy fried chicken tossed in a rich, spicy, and garlicky sauce. Packed with the bold flavors of garlic, soy sauce, tomato sauce, and fresh vegetables, this restaurant-style dish pairs perfectly with fried rice or noodles and makes an excellent dinner for spice lovers.
Ingredients

For the Chicken Marinade
- 1–2 eggs
- Salt to taste
- 2 tsp ginger-garlic paste
- 2 tbsp all-purpose flour (maida)
- 4 tbsp cornflour
- 1 tsp black pepper powder
- 400 g boneless chicken, cut into cubes
For the Hot Garlic Sauce

- 7–8 spring onion bulbs, chopped
- 1 green chilli, finely chopped
- 4 tbsp garlic, finely chopped
- ½ tbsp ginger, finely chopped
- 2 tbsp garlic paste
- 4 tbsp red chilli sauce
- 10 tbsp tomato sauce
- 4 tsp soy sauce
- 1 tsp black pepper powder
- 1 tsp vinegar
- 4 cups chicken stock
- Cornflour slurry, as required
- Capsicum cubes
- Onion cubes
- Chopped coriander leaves
- Spring onions, for garnish
- Oil, for frying and cooking
Instructions
- In a bowl, combine the eggs, salt, ginger-garlic paste, all-purpose flour, cornflour, black pepper, and chicken pieces.
- Mix well until the chicken is evenly coated.
- Marinate for 1 hour.
- Deep-fry the chicken until golden brown and crispy.
- Remove and keep aside.

- Heat a little oil in a wok or deep pan.
- Add the chopped spring onion bulbs and stir-fry for 1–2 minutes.
- Add the green chilli, chopped garlic, and chopped ginger. Stir-fry on high heat for another 1–2 minutes.
- Add the garlic paste and cook for about 1 minute.
- Add the red chilli sauce, tomato sauce, soy sauce, black pepper, and vinegar.
- Cook for another minute.
- Pour in the chicken stock and let it simmer for a few minutes.
- Add the cornflour slurry to achieve the desired sauce consistency.
- Add the capsicum cubes, onion cubes, and fried chicken pieces.
- Mix well and cook on low heat for 2–3 minutes.
- Finish with chopped coriander leaves.
Serving Suggestions
- Garnish generously with chopped spring onions.
- Serve hot with fried rice, hakka noodles, or steamed rice.
