

INGREDIENTS
- 2–2½ cups boiling hot water (depending upon your rava)
- ½ cup sooji (rava)
- 2 tbsp besan
- ½ cup ghee
- ½–¾ cup sugar
- Cashews and almonds (fried in ghee and chopped)
- Few strands of saffron (soaked in hot water)
- Green cardamom (elaichi) powder
- A small pinch of salt (optional)
- Orange food colour (optional)
INSTRUCTIONS
- Dry roast the sooji on low-medium flame for about 3 minutes.
- Add the besan and continue dry roasting for another 3 minutes, stirring continuously.

- Add ¼ cup ghee and continue roasting until the mixture turns a beautiful golden colour.

- Roast for another 2–3 minutes.
- Slowly add the boiling hot water while stirring continuously.

- Be careful at this stage, as the mixture may splutter.
- Add the soaked saffron and orange food colour (if using).
- Allow the halwa to cook until it thickens.
- Add the sugar and continue stirring.
- The sugar will melt and the halwa will loosen slightly.

- Add the remaining ghee, reserving a little for the end.
- Mix in the fried nuts and cardamom powder.
- Add the reserved ghee and mix well.

- Add a small pinch of salt (optional).
- Your delicious Bhandare Wala Sooji Ka Halwa is ready.

Serve hot with Sookhe Kale Chane, whole wheat puris and aloo ki sabzi.
