Introduction
This eggless Christmas Plum Cake is soft, moist, and packed with juicy dried fruits, crunchy nuts, warm spices, and refreshing citrus flavor. Made with yogurt instead of eggs, this festive cake is perfect for Christmas celebrations, holiday gatherings, or simply enjoying with a cup of tea.
Ingredients for the Cake

- 1½ cups all-purpose flour (maida)
- ¼ tsp cinnamon powder
- ⅛ tsp ginger powder
- ⅛ tsp clove powder
- 1 tsp orange zest
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup vegetable oil
- ¾ cup brown sugar (adjust to taste)
- 1 cup thick yogurt
- 1 tsp vanilla extract
For the Fruit Soak
- ⅓ cup orange juice
- ⅓ cup water
- 1 tbsp lemon juice
- ½–1 cup tutti frutti
- ¼ cup raisins
- ¼ cup chopped figs
- ¼ cup chopped dates
For Folding
- ¼ cup chopped almonds
- ¼ cup chopped cashews
- ¼ cup chopped walnuts
Prepare the Fruit Soak
- Preheat the oven to 160°C.
- Grease an 8-inch or 9-inch springform cake pan.
- In a saucepan, combine the orange juice, water, lemon juice, tutti frutti, raisins, figs, and dates.
- Cook over low heat until the fruits absorb the liquid and the mixture thickens.
- Allow it to cool completely.

Prepare the Cake Batter
- In a bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, clove powder, and orange zest.
- Whisk well.

- In another large bowl, whisk together the brown sugar and vegetable oil until creamy.
- Add the yogurt and vanilla extract.
- Mix until smooth.

- Gradually fold the dry ingredients into the wet mixture.
- Add the chopped almonds, cashews, and walnuts.
- Mix gently without overmixing.
- Fold in the soaked fruit mixture, reserving a small portion for topping.

- Transfer the batter to the prepared cake pan.

Bake the Cake
- Spread the reserved soaked fruits over the top.
- Bake at 160°C for 50–60 minutes, or until a skewer inserted into the center comes out clean.
- Allow the cake to cool completely before removing it from the pan.

Serving
- Slice the cake once completely cooled.
- Serve with tea, coffee, or as a festive holiday dessert.
