Pininyahang Manok sa Gata (Filipino Pineapple Chicken with Coconut Milk)

Pininyahang Manok sa Gata is a delicious Filipino chicken dish cooked with juicy pineapple, colorful vegetables, and creamy coconut milk. The combination of sweet pineapple and rich coconut milk creates a wonderfully balanced, comforting meal that is best enjoyed with steamed rice.
Ingredients
- 500 g chicken breast (traditionally legs and thighs are used)
- ½ carrot, diced into chunks
- ½ potato, diced into chunks
- ½ onion, diced into chunks
- ½ red bell pepper, cut into chunks
- ½ green bell pepper, cut into chunks
- 1–2 slices fresh pineapple, cut into chunks (canned pineapple can also be used)
- 3–4 cloves garlic, chopped
- 1–2 fresh green chilies
- ½ cup coconut milk
- ½ tbsp fish sauce
- 2 tbsp oil
- Salt and black pepper to taste

Instructions
- Cut the chicken breast into bite-sized pieces.
- Marinate the chicken with a little chopped garlic, salt, black pepper, and pineapple juice to infuse the pineapple flavor.
- Heat 1 tablespoon oil in a wok or pan.
- Add the carrots and potatoes and fry over medium-high heat until lightly browned and partially cooked.
- Add the bell peppers and pineapple chunks.
- Season with salt and black pepper and stir-fry for another 1–2 minutes.
- Remove the vegetables from the pan and keep aside.
- Heat the remaining 1 tablespoon oil in the same wok.
- Add the green chilies, garlic, and onions.
- Sauté for 1–2 minutes until fragrant.
- Add the marinated chicken.
- Pour in the fish sauce and season with black pepper.
- Cook over medium-high heat until the chicken begins to brown slightly.
- Add any remaining pineapple marinade.
- Continue cooking over medium heat.
- Pour in the coconut milk.
- Cover and cook until the chicken is almost tender. Add a little hot water if you prefer more gravy.
- Return the cooked vegetables and pineapple to the pan.
- Cook for another 5 minutes until both the chicken and vegetables are fully cooked.
- Reduce the sauce over medium-high heat until it reaches your preferred consistency.
- Taste and adjust the seasoning if needed.
- Turn off the heat.
- Your delicious Pininyahang Manok sa Gata is ready to serve.
- Enjoy hot with steamed rice.
