Pininyahang Manok sa Gata is a delicious Filipino chicken dish cooked with juicy pineapple, colorful vegetables, and creamy coconut milk. The combination of sweet pineapple and rich coconut milk creates a wonderfully balanced, comforting meal that is best enjoyed with steamed rice.

Ingredients

  • 500 g chicken breast (traditionally legs and thighs are used)
  • ½ carrot, diced into chunks
  • ½ potato, diced into chunks
  • ½ onion, diced into chunks
  • ½ red bell pepper, cut into chunks
  • ½ green bell pepper, cut into chunks
  • 1–2 slices fresh pineapple, cut into chunks (canned pineapple can also be used)
  • 3–4 cloves garlic, chopped
  • 1–2 fresh green chilies
  • ½ cup coconut milk
  • ½ tbsp fish sauce
  • 2 tbsp oil
  • Salt and black pepper to taste

Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. Marinate the chicken with a little chopped garlic, salt, black pepper, and pineapple juice to infuse the pineapple flavor.
  3. Heat 1 tablespoon oil in a wok or pan.
  4. Add the carrots and potatoes and fry over medium-high heat until lightly browned and partially cooked.
  5. Add the bell peppers and pineapple chunks.
  6. Season with salt and black pepper and stir-fry for another 1–2 minutes.
  7. Remove the vegetables from the pan and keep aside.
  8. Heat the remaining 1 tablespoon oil in the same wok.
  9. Add the green chilies, garlic, and onions.
  10. Sauté for 1–2 minutes until fragrant.
  11. Add the marinated chicken.
  12. Pour in the fish sauce and season with black pepper.
  13. Cook over medium-high heat until the chicken begins to brown slightly.
  14. Add any remaining pineapple marinade.
  15. Continue cooking over medium heat.
  16. Pour in the coconut milk.
  17. Cover and cook until the chicken is almost tender. Add a little hot water if you prefer more gravy.
  18. Return the cooked vegetables and pineapple to the pan.
  19. Cook for another 5 minutes until both the chicken and vegetables are fully cooked.
  20. Reduce the sauce over medium-high heat until it reaches your preferred consistency.
  21. Taste and adjust the seasoning if needed.
  22. Turn off the heat.
  23. Your delicious Pininyahang Manok sa Gata is ready to serve.
  24. Enjoy hot with steamed rice.
