Cassava Pone is a rich, pudding-like Caribbean dessert with African roots. Popular across Guyana, Barbados, Belize, Trinidad, and Jamaica, this naturally flourless treat is made with grated cassava, coconut, pumpkin, and warm spices. It has a dense, moist texture and can easily be made vegan with a few simple substitutions.
Ingredients

- 2 cups grated cassava
- ½ cup grated coconut
- ½ cup grated pumpkin (or substitute with sweet potato or carrot)
- 1 tbsp raisins (or more, as desired)
- ½–¾ cup brown sugar
- ½ tsp baking powder
- ½ tsp cinnamon powder
- ½ tsp nutmeg
- ½ tsp salt
- ½–¾ tsp freshly grated ginger
- ¾ cup evaporated milk
- ½ tsp black pepper (optional)
- ¼ cup coconut milk
- 2 tbsp melted butter
- Vanilla essence
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a baking dish.
- In a large mixing bowl, combine all the ingredients.
- Mix thoroughly until everything is well incorporated.

- Pour the mixture into the prepared baking dish.
- Bake for 60–75 minutes, or until the center is firm.
- If the center is still slightly wobbly, bake for a few extra minutes.
- Remove from the oven and allow it to cool completely.

- Your delicious Cassava Pone is now ready.
- Cut into your desired serving size.
- Serve with fresh cream, vanilla ice cream, or toasted coconut for an extra-special treat.
