Introduction
Homemade Tutti Frutti is a colorful, chewy candied raw papaya treat that’s widely used in cakes, cookies, ice creams, breads, and desserts. This easy recipe lets you customize the colors and flavors using your favorite food essences, making it a fun and delicious pantry staple for baking.
Ingredients

- 1 raw papaya, peeled and cut into small cubes (about 3 cups)
- Water (for boiling)
- 1 cup sugar
- 1 cup water
- Food colors of your choice
- Food essences of your choice
Instructions
- Boil the chopped raw papaya in water for 5–7 minutes until about 50% cooked and slightly translucent.
- Drain well and keep aside.

- In a saucepan, combine the sugar and 1 cup water.
- Bring to a boil until the sugar dissolves completely.
- Add the partially cooked papaya.
- Cover and simmer for 10–15 minutes until the sugar syrup reduces.

- Remove from the heat.
- Divide the papaya into three separate bowls.
- Add your preferred food colors and essences to each bowl.
- Mix gently until the papaya is evenly coated.

- Suggested flavors include pandan, saffron, and strawberry essence.

- Cover the bowls and leave them undisturbed for 10–12 hours.
- After resting, strain off any excess sugar syrup.

Storage
- Store the candied tutti frutti in an airtight container.
- Keep it in the freezer for up to 6 months.
- Use it in cakes, cookies, ice creams, breads, muffins, and other desserts.
