
South Indian Rava Idli (Sooji/Semolina Idli)

Rava Idlis are soft, steamed cakes made with semolina, yogurt, and vegetables. Unlike traditional fermented rice idlis, these instant idlis are quick to prepare and are served hot with sambar, mint chutney, and red onion chutney.
Ingredients

- 1 cup rava (suji/semolina)
- ½ cup curd (dahi/yogurt)
- 1 tsp mustard seeds
- 1 tbsp oil
- 1 tsp urad dal
- Few curry leaves, roughly chopped
- Few coriander leaves, chopped
- 1–2 dry red chilies
- Salt to taste
- 1 tsp Eno fruit salt
- 1 cup water
- ¼ cup grated carrots
- ¼ cup finely chopped beans
Instructions
- Heat oil in a pan.
- Add mustard seeds and let them crackle.
- Add urad dal, broken dry red chilies, and curry leaves.
- Sauté until the urad dal turns light brown.
- Add the rava.
- Roast on medium-low heat for 4–5 minutes, stirring continuously.
- Add the grated carrots and chopped beans.

- Switch off the heat and allow the mixture to cool completely.

- Transfer the cooled mixture to a bowl.
- Add the curd and mix well.
- Add ¾ cup water and stir until the batter is smooth and lump-free.
- Cover and rest the batter for 15–20 minutes.
- After resting, add the remaining ¼ cup water if required and mix well.
- The batter should have a thick, flowing consistency.
- Add salt and mix well.
- Add Eno fruit salt and gently mix.
- Immediately pour the batter into greased idli moulds.
- Steam for 10–12 minutes over medium-high heat.

- Remove the idlis from the steamer.
- Allow them to cool slightly.
- Carefully remove the idlis from the moulds.

Your soft and fluffy Instant Rava Vegetable Idlis are ready!

Serve hot with sambar, pudina chutney, and red onion chutney.
