
Ingredients
- 1 cup sugar or 200 gms
- ¾ -1 cup water
- 2 cups cashew
- ⅓ cup milk powder (optional)
- 1-2 tsp ghee
- Saffron / rose water / silver foil (optional)

Instructions
- Freeze cashews for 3-4 hours prior to grinding.
- Grind the cashews (pulsing motion) to a powder form.

- Sieve the mixture to get a fine powder (optional step).

- Mix milk powder into the mixture.
- Take a non-stick pan and add sugar and water to it.
- Heat the pan until the sugar dissolves.
- Mix in the cashew powder and keep stirring continuously.

- Mix in 1-2 tsp ghee.
- Keep stirring until it forms a soft dough-like consistency. It is ready when you can roll a small portion into a smooth ball without stickiness.



- Cool for a few minutes and transfer onto butter paper (or a greased thali if butter paper is unavailable).
- Roll out using a rolling pin or by hand.

- Add silver foil, kesar, or other preferred garnish.
- Let it cool for at least 2-3 hours at room temperature (do not refrigerate).
- Your festive Kaju Katli is ready.
- Cut into diamond shapes and enjoy.
