
INGREDIENTS FOR TAPIOCA PEARLS
- 125 gms tapioca starch (1 cup)
- 10g cocoa powder (1.5 tbsp)
- 60 gms brown sugar (⅓ cup packed)
- 5 g tapioca starch
- 70 ml water
- 35 gms brown sugar and 50 ml water
INSTRUCTIONS
- Mix the tapioca flour and cocoa powder in a bowl.

- In another saucepan add the sugar and 5 gms of tapioca starch along with water. Mix it well.
- Heat this mixture on low heat, continuously stirring until it thickens.
- Switch off flame and remove from fire.
- Now add the tapioca flour and cocoa powder mixture to it.
- Mix gently with spatula.
- Now transfer it to a hard surface and gently knead the flour by hand to form a dough (while still hot).

- When the dough is smooth (takes around 5 mins) divide it into 4 parts.
- Roll out these parts into long snake shape.
- Cut small pieces (around 0.5 cm) and then shape each into a ball.

- Keep the remaining dough covered while shaping the dough into small balls to avoid it from drying out.
- Sprinkle the dough balls with more flour to avoid them sticking to each other.

- Boil water in a pot and cook the balls on medium heat for 20 mins (drop the balls into the boiling water slowly so that they don’t stick to the bottom).
- After that keep a lid on the pot and let it sit for 30 mins.
- Drain.

- Take another pot and add the pearls to it along with 35 gms of brown sugar and 50 ml water.
- Place on stove and cook it again stirring continuously for around 5 mins until it reduces and becomes sticky.
- That’s it, remove to use later.
INGREDIENTS FOR TEA
- 2 teabags strong brew
- 20 gms brown sugar
- Milk powder or fresh milk
INSTRUCTIONS
- Mix everything to make strong tea.
LETS PUT IT TOGETHER
- Add the tapioca pearls to the bottom of glass.
- Smear the sides with the syrup in the pearls.
- Add ice.
- Pour in the tea.
- That’s it.
