Introduction
These fluffy Vegetarian Banana Pancakes are soft, light, and incredibly easy to make. Prepared with ripe bananas, oats flour, all-purpose flour, and milk, they’re naturally sweet, wholesome, and perfect for breakfast or brunch. Top them with maple syrup, fresh fruits, whipped cream, or berry compote for a delicious homemade treat.
Ingredients

- 1 ripe banana, peeled
- 1 cup oats flour
- ½ cup all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon (optional)
- 2 tbsp oil
- 1 cup milk
- Butter, for greasing the pan
Instructions
- Add the ripe banana, milk, and oil to a blender.
- Blend until smooth.
- Add the oats flour, all-purpose flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Blend just until the batter is smooth. Do not over-blend.
- Allow the batter to rest for 10–15 minutes.
- Heat a non-stick pan or griddle over medium heat.
- Lightly grease it with butter.
- Pour one ladleful of batter onto the pan for each pancake.

- Cook over low heat until bubbles begin to appear on the surface.
- Flip carefully and cook for another 2–3 minutes until both sides are golden brown.
Serving Suggestions

- Serve warm with maple syrup.
- Top with whipped cream, fresh banana slices, berries, or berry compote.
- Drizzle with honey or chocolate sauce for an extra indulgent breakfast.
