
Baked Karela chips Healthy Bitter gourd ( Haagalkayi, Bitter melon, Pavakkai) Chips. These oven baked Karela chips are super crispy, salty and savory. A perfect compliment to Daal Rice or just to be enjoyed on its own. This is a really healthy version as I’ve used only one 2 tbsp of oil and no sugar. Delicious vegan dish.Great for Diabetics too.
INGREDIENTS :


- 2-3 bitter gourd
- 1 1/2 tbsp roasted besan
- 1 ½ tbsp rice flour
- 1 tbsp cornflour
- Salt
- ¼ tsp turmeric powder
- Pinch of hing
- 2 tsp chilli powder
- 1 tsp garam masala powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ¼ tsp amchur (mango powder)
- 2-3 tbsp oil
INSTRUCTIONS
- Wash and slice the bitter gourd (Karela).

- Add 1 tsp salt to the Karela. Mix well and keep aside for 1 hour.
- Squeeze excess water from the Karela slices.
- Mix all the flours and powdered spices.

- Add the Karela to this mixture.

- Add 1-2 tbsp oil and evenly coat the masala onto the slices.

- Preheat oven to 350-400 F.
- Line a baking tray and neatly arrange all the Karela slices on it.

- Bake at 350 F for 20-25 mins.
- Remove tray carefully and flip the slices over to the other side.
- Now brush some oil on the Karela slices.
- Bake again fo 15-20 mins or until crispy.

- Remove from oven.
- Add few fried curry leaves and that’s it.
- Your crispy, tangy bitter gourd chips are ready.
