
Ube Halaya is a traditional Filipino jam made from boiled purple yam (ube). It is commonly used as the base for many Filipino desserts such as pastries, ice cream and Halo-Halo. Rich, creamy and naturally sweet, it’s incredibly delicious. (I personally enjoyed it spread on toast with a cup of tea… lol!)
Ingredients
- 500 gms ube (purple yam), boiled and grated
- 1 can condensed milk
- 1 can evaporated milk
- ½–1 cup sugar
- 1 tsp vanilla extract
- 1 tsp ube food colouring (optional)
- 2 tbsp butter
Instructions
- Mix together the grated ube, evaporated milk, condensed milk and sugar.

- Blend or purée the mixture until smooth.

- Add the vanilla extract and ube food colouring.
- Heat the butter in a pan and pour in the prepared mixture.

- Cook over low heat for 25–30 minutes.
- Keep stirring continuously.
- Cook until the mixture thickens and begins to leave the sides of the pan.

- Remove from the heat.
- Allow it to cool completely.
- Your delicious homemade Ube Halaya is ready to enjoy.
