
INGREDIENTS
- 1 medium Onion
- 1 inch Ginger
- 3-4 Garlic cloves
- 1-2 pieces Lemongrass
- 2-3 kaffir lime leaves
- Fresh turmeric (optional)
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- ¼ tsp Turmeric powder
- 1 tsp curry powder
- 2-3 green chilies
- 1 red chili
- Salt to taste
- Sugar or jaggery to taste
- 1-2 tbsp Oil
- 1 tbsp Besan
- 400 ml Coconut milk
- 1 tbsp fish sauce
- ½ cup broccoli
- ¼ cup baby corn
- ¼ cup Carrots
- ½ cup Mushroom
- Few Basil leaves
- Cooked noodles


ACCOMPANIMENTS (TOPPINGS)
- Burnt garlic
- Boiled eggs
- Peanuts
- Chilli flakes
- Spring onions
- Fried onions
- Sliced onion
- Sliced red chilies
- Coriander
- Lemon
- Tofu
- Bean sprouts



INSTRUCTIONS
Grind together onion, ginger, garlic, turmeric, lemongrass and chilies to a fine paste.
To this paste add cumin powder, coriander powder, turmeric powder, curry powder, and salt. Mix well.


Take oil in a pan.
Fry this paste for 3-4 mins.

Add besan and continue to fry until the rawness of besan disappears.

Add water and stir well until no more lumps.
Add coconut milk, give one boil.

Add sugar, salt.
Add vegetables and cook for 2-4 mins.

Add fish sauce and check seasoning.
Add basil leaves and some red chilies, check seasoning and your KHAOW SUEY soup is ready.

ASSEMBLE
Take a bowl and add some soup.
Add noodles and top off with more soup.
Now go ahead and add the toppings of your choice.
And your very own Bowl of Burmese Khaow SUEY is ready.

Boiled chicken can be added in the topping list as well.
