Ingredients

- 1 bunch spinach (300–400 g), washed and chopped (avoid too many stems)
- 1 tbsp garlic, chopped
- 200 g sweet corn kernels, boiled
- 2 tbsp all-purpose flour
- ½ tsp chilli flakes
- 200 ml milk
- ½ tsp black pepper
- Salt, to taste
- 4–6 bread slices
- 40 g butter
- Cheese slices
- 1 tsp ketchup (or hot sauce)
- Mozzarella cheese (optional)
Instructions
- Heat the butter in a pan and sauté the garlic until fragrant.
- Add the chilli flakes and boiled sweet corn. Cook for 1–2 minutes.
- Add the chopped spinach and sauté for 4–6 minutes until wilted.
- Sprinkle in the all-purpose flour and cook until the raw taste disappears.
- Pour in the milk and simmer.
- Add salt and black pepper, then cook for 3–4 minutes until the mixture thickens.
- Stir in 1 teaspoon of ketchup or hot sauce.
- Add mozzarella cheese if desired.
- Turn off the heat and allow the filling to cool.

- Place a cheese slice on one bread slice.
- Spread the cooled spinach and corn filling over the cheese.
- Cover with another bread slice.
- Toast the sandwich on a buttered hot griddle or grill until both sides are golden brown and crispy.
- Your delicious vegetarian Spinach & Corn Sandwich is ready.
- Serve hot with ketchup and green chutney.
