Ingredients

- 1 ripe avocado
- Salt and black pepper, to taste
- A handful of coriander leaves, chopped
- ½ onion, finely chopped
- 1 tsp garlic, chopped
- 1 tsp lemon juice
- 3 slices of bread
- 2–3 tbsp green sandwich chutney
- 2–3 tomato slices
- Few slices of coloured capsicum (green used here)
- Few cucumber slices
- 1 tsp chilli flakes (optional)
- ½ tsp mixed herbs
- ½ tsp chaat masala
- Butter, for toasting
Instructions
- Mash the avocado in a bowl.
- Add salt, black pepper, coriander leaves, garlic, onion, and lemon juice.
- Mix everything well until combined. Your avocado filling is ready.
- Spread the green sandwich chutney evenly on all three bread slices.

- Spread 1–2 teaspoons of the avocado mixture over the first bread slice.

- Arrange the capsicum slices over the avocado.
- Sprinkle with chilli flakes, mixed herbs, and chaat masala.

- Cover with the second bread slice.
- Layer with cucumber and tomato slices.
- Sprinkle again with mixed herbs, chaat masala, and chilli flakes.

- Place the third bread slice on top.
- Toast the sandwich with butter on a hot griddle or tawa until both sides are golden and crisp.

- Your healthy and delicious avocado sandwich is ready in under 15 minutes.

- Slice the sandwich and serve immediately.
