Sindhi Special Seyal Double Roti

Seyal Bread is a famous Sindhi breakfast dish. It is made with bread (double roti) cooked in a spicy, tangy, and flavorful gravy prepared with coriander, green chilies, kasuri methi, garlic, and tamarind. This vegetarian recipe is quick, easy, and absolutely delicious.
Green Masala Ingredients
- ½ cup coriander leaves
- 3 green chilies
- Few mint leaves
- 4–6 garlic cloves
- 1 piece ginger
- ¼ tsp jeera (cumin)
- Salt to taste
Green Masala Instructions
- Grind all the ingredients into a smooth paste using a little water if required.
- Keep the green masala aside for later use.
Other Ingredients
- 4–5 slices of bread (can also use pav or even stale rotis)
- 2 medium onions, chopped
- 1 medium tomato, puréed
- 1–2 tsp tamarind paste
- 1 tsp red chili powder (reduce if you prefer less spice)
- ¼ tsp turmeric powder
- ½–1 tsp kasuri methi (dry fenugreek leaves)
- 1 tbsp coriander powder
- Salt to taste
- 2–3 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a kadhai or pan.
- Add the chopped onions and fry for 2–3 minutes.
- Add the tomato purée.
- Cook for another 3–4 minutes.
- Add turmeric powder, red chili powder, coriander powder, and salt.
- Cook the spices for 1–2 minutes.
- Add the prepared green masala, a few coriander leaves, and the kasuri methi.

- Cook for 2–3 minutes until the masala is fully cooked and the oil begins to separate.

- Add ¼ to ½ cup water along with the tamarind paste. (The amount of water depends on how soft you want the bread. For a semi-dry version, use only ¼ cup water.)
- Cover and cook the masala for a few more minutes.
- Add the bread, cut into bite-sized pieces.

- Gently stir for 5–7 minutes, ensuring every bread piece is coated well with the masala.

- Garnish with fresh coriander leaves.

- Serve hot for the best taste.
