Chatpati Arbi

This vegetarian/vegan colocasia (arbi) dish is simply irresistible. It can be enjoyed with rotis or served as a delicious chaat.
Ingredients
- 7–10 arbi (colocasia roots), boiled and peeled
- ½ cup rice flour
- 1 medium onion, chopped
- 2–3 green chilies
- 10–12 curry leaves
- ½ tsp coriander powder
- ½ tsp cumin powder
- 1 tsp chaat masala
- 1–2 tsp red chili powder
- 1–2 tsp coriander chutney (recipe in another blog)
- 2–3 tbsp oil
- Salt to taste


Note: In the original pictures, only 5–6 arbi were used. The ingredients have been adjusted here for 7–10 arbi.
Instructions
- Heat 1–2 tbsp oil in a pan.
- Gently flatten the boiled arbi with your palm.
- In a plate, mix the rice flour and salt.
- Coat each arbi evenly with the rice flour mixture.

- Shallow fry the coated arbi until golden and crispy.
- Remove and keep aside.

- In another kadhai, heat 1–2 tbsp oil.
- Add the curry leaves and chopped onion.
- Fry for a few minutes until the onions turn light golden.
- Add the green chilies.

- Add salt and mix well.
- Cook for 1–2 minutes.
- Add the fried arbi.
- Add the coriander powder, cumin powder, chaat masala, and red chili powder.

- Gently sauté until the masala coats the arbi.
- Add the coriander chutney and mix well.

- Cook for another 1–2 minutes.
- Garnish with fresh coriander leaves.
- Your delicious spicy Chatpati Arbi is ready to serve hot.
