
This recipe is really easy and quick to prepare. It’s cooked with fresh ingredients like mint, coriander, and coconut along with minimal spices. Kids would love it too.


Ingredients

- 250 gms tendli (ivy gourd), cut lengthwise
- 1 tsp cumin seeds
- 1 tbsp sesame seeds
- 1–2 tbsp peanuts or walnuts, coarsely crushed
- Chopped coriander leaves
- ½ cup grated fresh coconut
- ½–1 tsp sugar
- 1–2 green chilies
- 10–12 fresh mint leaves, chopped
- 1 tbsp coriander powder
- ¼ tsp turmeric powder
- 1 tsp red chili powder
- ¼ tsp mango powder or lemon juice
- Salt to taste
- Pinch of hing (asafoetida)
- 2–3 tbsp oil
Instructions
- Heat oil in a pan.
- Add cumin seeds and hing, allowing them to splutter.
- Add chopped green chilies.
- Add sesame seeds.

- Add the tendli and fry for 1–2 minutes.
- Cover and cook for a few minutes.
- In a bowl, mix together the peanuts, coriander, grated coconut, mint leaves, salt, and sugar.

- Keep the prepared masala aside.
- Check the tendli and stir it.
- Cover and continue cooking for 3–5 minutes.
- No water is needed. Let the tendli brown slightly.
- Add coriander powder, turmeric powder, and red chili powder.

- Fry for another 3–4 minutes.

- Add the prepared coconut mixture to the tendli.
- Add the mango powder.

- Mix everything well and adjust the seasoning.
- Switch off the heat.
- Your easy and healthy Tendli Sambhariya is ready.

Enjoy with bhakris or rotis.
