

This delicious and simple mushroom and peas recipe is a semi-dry dish cooked with double onions (hence the name Do Pyaza) and minimal spices. It is vegan-friendly as the cream and yogurt can be omitted or substituted with cashews or almonds. Best enjoyed with puris or Indian bread.


Ingredients

- 250 gms button mushrooms
- ½–1 cup green peas (matar)
- 1–2 onions, grated
- 1 onion, cut into 1-inch squares
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tbsp yogurt (optional)
- 1 green chili, chopped
- 1–2 tomatoes, grated or pureed
- ½–1 tsp turmeric powder
- 1–2 tsp coriander powder
- 2–3 tsp red chili powder
- ½ tsp Shilpa’s Masala Mill Garam Masala
- ¼ tsp black pepper powder
- 1 cinnamon stick
- 1 black cardamom
- 1 bay leaf
- 3–4 tbsp oil
- 1 tsp Kasuri Methi
- 1 tbsp cooking cream (or more if desired)
- Salt to taste
- Hot water
Instructions
- Pat the mushrooms dry and slice them.
- Marinate them with a little salt, red chili powder, black pepper, and turmeric powder.
- Keep aside for 10–15 minutes.

- Heat 1–2 tsp oil and stir-fry the mushrooms for 3–5 minutes until lightly browned. Do not fully cook them.

- Remove the mushrooms and keep aside.
- In the same pan, fry the onion cubes until translucent. Remove and keep aside.

- Add more oil to the same pan.
- Add cumin seeds and let them splutter.
- Add the bay leaf, cinnamon, green chili, and black cardamom.
- Add the grated onion and fry until browned.
- Add the ginger-garlic paste and stir-fry for 1 minute.
- Add red chili powder, coriander powder, and turmeric powder. Fry for 30 seconds.
- Add yogurt and cook until the oil separates.

- Add the tomato puree.

- Cook until the oil separates. You may cover and cook for 2–3 minutes on medium heat.

- Add the green peas.

- Mix well.
- Cover and cook for 3–4 minutes until the oil separates.

- Add salt.
- Pour in hot water.
- Cover and cook on low heat for 5–6 minutes until the peas are cooked.
- Add the fried mushrooms.

- Add the cooking cream.
- Add Kasuri Methi.
- Cover and cook for another 5–6 minutes.
- Add the fried onion cubes.

- Add garam masala and chopped coriander.
- Your restaurant-style Matar Mushroom Do Pyaza is ready.

Serve hot with puris, rotis, naans, or pulao.
