
Veg Mahura Odia Authentic Recipe.
Mahura or vegetable curry is a part of the Maha Prasad served to Lord Jagannath in Jagannath Temple, Puri, Odisha.
This is one of the Chappan (56) Bhog served there.
It is made with lots of assorted vegetables, ghee, coconut and minimal spices.
No onion, ginger, garlic or tomatoes are used.
This divinely tasty dish is served with Kanika (Sweet Rice) or Ghia Anna (Ghee Rice).
INGREDIENTS:

- ½ cup soaked and boiled brown Chana
VEGETABLES:

- ½ cup pumpkin, cut
- ½ cup pointed gourd, cut
- ½ cup raw banana, peeled and cut
- ½ cup sweet potato, cut
- ¼ cup baingan (eggplant), cut
- ¼ cup colocasia (Arbi), peeled and cut
SPICE PASTE
- 2 tsp saunf (fennel)
- 1 tsp cumin
- 1 tsp black pepper
- 1 bay leaf
INSTRUCTIONS
- Soak these spices in water for 30 to 45 mins.

- Fine grind to make the spice paste.
OTHER INGREDIENTS:

- ½ cup grated coconut
- Jaggery to taste
- Salt to taste
- ¼ cup Urad dal ki badiyan (I didn’t have any)
- Hing
- ¼ tsp Haldi powder
- Mustard seeds for Tadka
- Dry red chilies for Tadka
INSTRUCTIONS
- Heat ghee in a pan.
- Pan-fry the Urad dal badis until slightly golden.
- Remove and keep aside.
- Add some more ghee.
- Add prepared spice paste.
- Add turmeric and salt and fry on low flame for 1-2 mins.
- Add all the cut vegetables.
- Add boiled Chana.

- Mix well.
- Add enough water to cook vegetables.
- Cover and cook on low flame (10 mins).
- Add jaggery.
- Add grated coconut and mix well.

- Now cook on low for few more mins until vegetables are cooked.
- Add fried badis and mix.
- Switch off flame.
- Prepare the Tadka.
- Heat ghee, add mustard seeds and red chilies.
- Add Hing.
- Pour this Tadka over the prepared Mahura vegetable.
- That’s it, your Veg Mahura is ready.
