
Kolhapuri Akha Masoor
Maharashtrian Sabut (whole) Masoor.
Enjoyed with naans and rice.
INGREDIENTS:

- 1 cup Sabut Masoor (soaked)
- 2 tsp fresh grated coconut
- 1-2 green chilies
- 1-2 large garlic cloves
- 1 inch ginger
- Fresh coriander
- 1 medium onion, grated
- 1 medium tomato, grated

- 2 bay leaves
- 1 tsp Kanda Lasun Masala (or Garam Masala)
- 1 tsp red chili powder
- ½ tsp turmeric powder
- 2-3 tbsp oil
- Salt to taste
INSTRUCTIONS
- Pressure cook the soaked Akha Masoor with little chopped onion, a pinch of turmeric and salt for one or two whistles only.


- Coarsely grind green chili, coriander, garlic, ginger, and coconut.

- Keep aside.
- Heat oil in a pan.
- Add bay leaves.
- Add grated onion.
- Fry for few mins until onion turns golden brown.
- Add the coarsely ground coconut paste.
- Fry for 1 min.
- Add turmeric, chili powder, Kanda Lasun Masala, and salt.
- Fry for 1-2 mins.
- Add tomato.
- Fry until oil separates from sides of the pan.

- Add the cooked Masoor.

- Sauté for 1-2 mins.
- Add hot water to desired consistency.
- Adjust seasoning.
- Cook for few more minutes.
- That’s it, your easy and delicious Kolhapuri Akha Masoor is ready.
Traditionally served and enjoyed with Naan, it’s delicious with steamed rice too.
