Introduction
This Vegetarian Shepherd’s Pie is a hearty and comforting meat-free version of the classic British dish. Tender jackfruit, mushrooms, herbs, and vegetables are simmered in a rich savory gravy, then topped with creamy mashed potatoes and baked until beautifully golden. It’s a perfect family dinner that’s both wholesome and satisfying.
Ingredients for Potato Mash

- 3–4 potatoes, boiled
- Hot milk, as required
- ¼ cup butter
- Salt to taste
- Black pepper to taste
- ¼ cup cheese
Instructions for Potato Mash
- Boil the potatoes until tender.
- Mash them until smooth.
- Add hot milk, butter, cheese, salt, and black pepper.
- Mix well until creamy and adjust the seasoning.
Ingredients for the Base Layer

- 1 onion, chopped
- ½ carrot, diced
- 1 stalk celery, diced
- 6–7 garlic cloves, sliced
- 1 jackfruit, peeled and prepared (or canned jackfruit)
- 2–3 tbsp tomato paste
- Salt to taste
- Black pepper
- Chilli flakes (optional)
- Cumin powder (optional)
- Chilli powder (optional)
- Ketchup (optional)
- Pinch of sugar (optional)
- Rosemary
- Thyme
- 6–7 mushrooms, chopped
- Red wine (or chicken stock mixed with light & dark soy sauce and vinegar)
- Chicken stock
- 1–2 tsp brewed coffee
- Oil
Instructions for the Base Layer
- Heat oil in a large pot.
- Add the onions, celery, carrots, and garlic.
- Sauté for a few minutes until softened.

- Add rosemary, thyme, salt, black pepper, and other seasonings.
- Stir in the tomato paste.
- Add the jackfruit and mushrooms.
- Sauté for a few more minutes.

- Pour in the red wine (or substitute), brewed coffee, and chicken stock.

- Stir everything well.
- Simmer on low heat for 15–20 minutes until the vegetables are cooked and the sauce thickens.
Assemble the Shepherd’s Pie

- Preheat the oven to 180°C (356°F).
- Transfer the cooked jackfruit mixture into a baking dish.
- Spread the prepared creamy mashed potatoes evenly over the top.

- Smooth the surface with a spatula.
- Bake for 25–35 minutes or until the top becomes lightly golden and crispy.

- Serve hot, garnished with fresh herbs.
Notes
- Lentils or chickpeas can be used instead of jackfruit.
- Soya granules are another great alternative.
- Sweet potato mash can be used instead of regular mashed potatoes for the topping.
