
INGREDIENTS FOR DRY MIX
- 2½ cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup mini chocolate chips
INSTRUCTIONS
- Mix all the dry ingredients together until well combined.

INGREDIENTS FOR WET MIX
- ¾–1 cup granulated sugar
- 2 large eggs (room temperature)
- 1 cup buttermilk (room temperature)
(1 cup milk + 1–2 tbsp lemon juice) - ½ cup softened butter
- 1 tbsp vanilla extract
INSTRUCTIONS
- Using a hand mixer, beat all the wet ingredients together in a large bowl until well combined.


LET’S PUT IT TOGETHER
- Preheat the oven to 425°F (218°C).
- Add the dry mixture to the wet mixture.
- Gently fold until just combined.
- Do not overmix.
- Fill a greased muffin tray to the brim with the batter.

- You may fill the batter in alternate muffin slots for better baking.
- Sprinkle extra chocolate chips on top.
- Optionally sprinkle some coarse sugar.
- Bake at 425°F (218°C) for 5 minutes.
- Without removing the muffins, reduce the oven temperature to 375°F (190°C) and bake for another 12–13 minutes (12 minutes was perfect in this recipe).
- Check doneness using the toothpick test. If the toothpick touches a chocolate chip, it may come out wet.
- Do not overbake, or the muffins may become dry.
