
Ingredients
- ½ cup vegetable oil
- ¾ cup semi-sweet chocolate chips (I could not find them, so I substituted with half dark chocolate and half milk chocolate chips)
- 3 large eggs (room temperature)
- ½–¾ cup white sugar
- ¼ cup light brown sugar
- ½ tsp instant coffee powder
- 1 tsp vanilla extract
- ¾ cup all-purpose flour (plain)
- ¼ tsp salt
Instructions
- Preheat the oven to 350°F (180°C).
- In a small pan, heat the vegetable oil over medium heat and add the chocolate chips.
- Once the chocolate chips begin to melt, remove the pan from the heat and allow the mixture to cool. Set aside.

- In a large bowl, whisk the eggs.
- Add the white sugar, brown sugar, instant coffee powder, and vanilla. Whisk until the sugar dissolves.
- Pour in the melted chocolate mixture and combine well.
- Add the flour and salt, then mix until the batter is smooth and lump-free.
- Pour the batter into a lined 8×8-inch baking dish. (A 9×9-inch dish can also be used for slightly thinner brownies.)
- Bake for 25–30 minutes at 350°F (180°C).

Cool before serving.
