Green Coriander Chutney

Green Coriander Chutney is a fresh, flavorful Indian condiment made with coriander leaves, green chilies, ginger, garlic, roasted peanuts, and aromatic spices. This vibrant chutney pairs perfectly with sandwiches, pakoras, chaats, kebabs, tikkis, stuffed parathas, and many other Indian snacks. It is quick to prepare and can be frozen for several months without losing its flavor.

Ingredients
- 2 cups fresh coriander leaves (dhania)
- 3–4 green chilies
- 1-inch piece ginger
- 1 tbsp roasted peanuts
- 1 tsp cumin powder
- Salt to taste
- ½ tsp kala namak (black salt)
- 1 tbsp lemon juice
- 2 tbsp namkeen sev
- ¼ tsp sugar
- 1 garlic clove
Instructions
- Add all the ingredients to a blender or chutney grinder.
- Blend into a smooth paste using chilled water or 2 ice cubes.
- Taste the chutney and adjust the salt or lemon juice if required.
- Serve immediately or store for later use. This chutney pairs wonderfully with sandwiches, pakodas, chaats, kebabs, tikkis, stuffed parathas, and many other snacks.

Notes
- Blending with chilled water or ice cubes helps retain the vibrant green color.
- Roasted chana dal can be used instead of roasted peanuts.
- Boondi can be substituted for namkeen sev.
- Sev acts as a thickening agent while also enhancing the flavor.
- The chutney can be stored in the freezer for up to 4–5 months.
