About Quinoa Poha
Quinoa Poha is a healthy and nutritious twist on traditional poha. Made with protein-rich quinoa instead of flattened rice, this wholesome breakfast is light, filling, and packed with vegetables, peanuts, and aromatic Indian spices. It makes a perfect start to the day and pairs wonderfully with a hot cup of masala chai.
Ingredients
- 1 cup quinoa
- 2 cups water
- 2 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- Pinch of hing (asafoetida)
- ½ tsp turmeric powder
- 2 green chillies, chopped
- 1–2 boiled potatoes, cubed
- 1–2 onions, chopped
- Roasted peanuts
- Few curry leaves
- Fresh coriander leaves, chopped
- 1–2 tbsp freshly grated coconut
- Salt to taste
- Pinch of sugar (optional)
- Lemon wedges


Instructions
Rinse the quinoa several times to remove its natural bitterness.
Soak it for 15–20 minutes.
Cook the quinoa with water using a 1:2 ratio, just like cooking rice.
Set the cooked quinoa aside.
Heat oil in a pan.
Add mustard seeds, cumin seeds, and hing.
Once the seeds begin to splutter, add the chopped green chillies, curry leaves, and onions.
Sauté for a few minutes until the onions become translucent. There is no need to brown them.
Add the boiled potato cubes and sauté for another minute.

Add the roasted peanuts, turmeric powder, salt, and optional sugar.
Cook for 1–2 minutes.
Add the cooked quinoa and mix everything well.

Adjust the seasoning to taste.
Your healthy Quinoa Poha is ready.
Garnish with chopped coriander leaves, freshly grated coconut, and a slice of lemon.

Serving Suggestion
Serve hot with a cup of freshly brewed masala chai for a wholesome and satisfying breakfast.
