Middle Eastern Hummus (With Homemade Tahini Paste)

Hummus is a delicious, healthy, and creamy Middle Eastern dip made from cooked chickpeas, tahini, lemon juice, garlic, olive oil, and spices. This protein-rich vegan spread is perfect with fresh vegetables, pita bread, crackers, sandwiches, wraps, or crispy homemade falafels.
Ingredients

- ¼ cup white sesame seeds
- 4 tbsp extra virgin olive oil
- 1 cup chickpeas, soaked overnight, boiled, and drained
- 1–2 tbsp lemon juice
- 2–3 garlic cloves
- ½ tsp cumin seeds or cumin powder
- 1 tbsp salt
- 1–2 tbsp hot water
Instructions
- Dry roast the white sesame seeds until they turn light golden (do not brown them).
- Grind the roasted sesame seeds into a fine powder.
- Add 1–2 tbsp olive oil and blend again until a smooth, runny tahini paste forms.
- Your homemade Tahini paste is ready.
- Add the cooked chickpeas to a food processor.
- Add the prepared Tahini paste.
- Add the lemon juice.
- Add the garlic, salt, and cumin.
- Blend everything together until smooth.

- While blending, gradually add the remaining olive oil and hot water until the hummus becomes smooth and creamy.
- Your creamy homemade Hummus is ready.

- Transfer the hummus to a serving bowl.
- Drizzle with olive oil and sprinkle paprika before serving.
