
Lauki ka Bharta.
Doodhi, Ghiya or Bottle Gourd Bharta.
Lauki Bharta is a delicious and innovative vegetarian dish.
Served hot with Phulkas, Rotis or Jeera Rice.
INGREDIENTS:

- 1 Lauki (Dudhi, Bottle Gourd, Ghiya)
- 2-3 medium onions, finely chopped
- 2-3 medium tomatoes, finely chopped
- ¼ tsp turmeric powder
- ½ tsp Shilpa’s Masala Mill Garam Masala
- 1 tsp coriander powder
- 1 tsp cumin powder
- ¼ tsp Hing
- 1 tsp Shilpa’s Masala Mill Kashmiri Chilli Powder
- Salt to taste
- 1-2 tsp roasted peanuts, coarsely ground
- 1-2 tbsp ginger, garlic and green chilli paste
- Coriander leaves for garnish
INSTRUCTIONS
- Using a stand, fire roast the Lauki.

- Use medium flame and keep turning it around to char (darken, blacken) the skin on all sides and partially cook the Lauki.


- Switch off gas.
- Wash the Lauki (while still hot) and scrape the charred skin with a knife.
- Wash Lauki again and keep aside to cool.
- Once cooled, coarsely chop and keep aside.

- Heat oil in a kadhai or pan.
- Add jeera and Hing.
- Keep flame medium low.
- Add ginger garlic green chilli paste.
- Add onion.
- Fry for 2-3 mins.
- Now add tomatoes and fry until tomatoes soften.
- Add powdered spices and salt.

- Fry well until oil separates on the sides.
- Add the roasted ground peanuts.

- Continue to fry for 2-3 mins.
- Now add the Lauki.

- Cover and cook for 3-5 mins.
- Remove lid and continue to fry (stirring continuously) until oil separates.
- That’s it, your unique and tasty Lauki ka Bharta is ready.
- Serve garnished with coriander leaves.

Enjoy with Phulkas or Rotis.
