


Introduction
Maharashtrian spicy egg curry made with broken raw eggs instead of boiled eggs.
Ingredients
- 4 eggs, raw
- 1 small onion, chopped
- ½ cup Kanda Khobra Garam Masala (Vatan Masala)
- 1 cup coriander leaves
- 2 tsp red chilli powder (Shilpa’s Masala Mill Everyday Masala)
- ¼ tsp turmeric powder
- 2 tbsp oil
- Salt to taste
- Pinch of sugar to taste
- Hot water
Instructions
- Grind the Kanda Khobra Garam Masala with coriander into a fine paste.

- Heat oil in a pan.
- Add onion and sauté for a few minutes.
- Add the chilli powder and turmeric, then fry for 1 minute on low flame.

- Add the prepared ground paste.

- Fry on low-medium heat until aromatic.

- Add hot water and salt. Mix well and let it come to a boil.


- Lower the flame and break the raw eggs directly into the curry.

- Cover and cook on low flame for 4-5 minutes.

- Stir gently.

- That’s it, your easy egg curry is ready.

Garnish with coriander and enjoy with chapatis and rice.
