

Ingredients
- 250 gms butter (room temperature)
- 150 gms sugar (1 cup)
- 5 large egg yolks
- 1 tsp vanilla essence
- 3 tbsp condensed milk
- 2 tbsp powdered milk
- 2 cups (250 gms) self-raising flour or 2 cups all-purpose flour + 2 tsp baking powder + ½ tsp salt
- 5 egg whites
- ¼ cup (50 gms) sugar
- 2 tbsp yogurt
- 1 tsp cocoa powder
- 1 tsp red food colouring
- 2 tbsp cocoa powder
- 1 tsp chocolate Emulco (I used Hershey’s)

Instructions
- Preheat the oven to 160°C.
- In a large mixing bowl, whisk together butter and sugar until pale and fluffy.
- Add one egg yolk at a time and whisk well after each addition.

- Add vanilla essence and condensed milk. Whisk well.
- Sieve the milk powder and self-raising flour into the batter in batches.
- Gently fold using a spatula.
- In another bowl, whisk the egg whites.
- Add 50 gms sugar and whisk until soft peaks form.
- Fold the egg white mixture gently into the cake batter.
- Divide the batter equally into 3 bowls.

- To one bowl, add yogurt, 1 tsp cocoa powder and red food colouring. Mix well.
- To another bowl, add 2 tbsp cocoa powder and chocolate Emulco. Mix well.
- Leave the third bowl plain.
- Grease an 8-inch cake pan.
- Pour the three batters alternately into the centre of the pan.

- Use a toothpick to create a beautiful marble pattern on the top.


- Bake at 160°C for 60–70 minutes or until a skewer inserted in the centre comes out clean.

- Allow the cake to cool completely.
- Slice and enjoy your visually perfect Marble Cake.
