Masala for Indian Milk Tea
Ingredients

- 19 g green cardamom (about 2 tbsp)
- 3 g cloves (about 1 tbsp)
- 3 g cinnamon sticks (3 sticks)
- ½ tsp nutmeg
- 1 black cardamom
- 2 bay leaves
- 2 tsp black peppercorns
- 2–3 tsp sonth powder (dried ginger powder)
- 12–15 strands saffron
Instructions
- Dry roast all the ingredients except the sonth powder and saffron until fragrant.
- Be careful not to burn the spices.

- Allow the roasted spices to cool completely.
- Add the saffron and sonth powder.
- Grind everything into a fine powder.

- Your fragrant homemade Winter Tea Masala is ready.

How to Make Masala Chai
- Store the tea masala in an airtight container.
- Whenever you want a comforting cup of tea, add ¾–1 cup water to a saucepan.
- Add a pinch of the prepared tea masala.
- Add 2 tsp tea leaves and bring to a boil.
- Pour in ¾ cup milk and continue to simmer.
- Add sugar or your preferred sweetener to taste.
- Serve hot and enjoy your restaurant-style Masala Chai.
