
Rava Kesari (Kesari Bath).
Rava Kesari is a quick and easy dessert made with very few ingredients (It’s generally loaded with ghee but I reduced the amount for this preparation).
RAVA KESARI
INGREDIENTS
- ½ cup rava (semolina, sooji)
- ½ cup ghee
- 1 cup sugar (or adjust to your taste)
- 1 cup water
- ¼ tsp cardamom powder
- 6-7 strands of kesar (saffron) soaked in 1-2 tsp of warm milk
- Ghee fried cashew nuts for garnish
- Kesari food color (optional)
INSTRUCTIONS
- Heat ghee in a pan.
- Add rava (sooji).
- Stir fry the rava on low flame. Keep stirring.
- Fry until rava changes colour and becomes aromatic (around 7-8 mins).
- Switch off the gas. Keep aside.
- Now heat up the water in a small pan.
- Add a pinch of food color if desired.
- Boil.
- Once the water boils, add this hot boiling water to the rava.
- Keep flame on low and stir continuously.
- Cover and cook for 2-3 mins.
- Water will get absorbed by the rava.
- Open lid, stir the rava and then add sugar.
- Mix it well.
- Fry until ghee separates from sides of the pan.

- Add saffron soaked in milk.
- Mix.
- Add cardamom powder.
- Fry for another 1-2 mins.
- Your delicious Rava Kesari is ready.
- Serve garnished with fried cashews.
- Enjoy with puris or just as it is.
