Sabudana Vada (Maharashtrian Sago Vada)

Sabudana Vada is a traditional fried snack from Maharashtra made with soaked sabudana (tapioca pearls), potatoes, peanuts, and aromatic spices. These crispy golden vadas are a popular breakfast, tea-time snack, and fasting (vrat) recipe. They are naturally gluten-free and vegan, making them a wholesome and delicious treat served with green chutney or cucumber raita.
Ingredients
- ½ cup sabudana (tapioca pearls or sago)
- 1½ cups boiled and grated potatoes
- ⅓ cup roasted and coarsely crushed peanuts
- 2 tbsp chopped coriander leaves
- ½ tsp cumin seeds
- 1–2 finely chopped green chillies
- 1 tsp rock salt
- ¼ tsp sugar
- 1 tsp finely chopped ginger
Soaking the Sabudana
- Rinse the sabudana 3–4 times until the water runs clear.
- Soak the sabudana using water equal to about ¾ of its quantity, or until the water level is approximately ¼ inch above the sabudana.
- Leave it to soak overnight or for 5–6 hours, depending on the variety of sabudana.
- To check if it is properly soaked, press a pearl between your thumb and finger. It should mash easily.
- Drain any excess water before using.
Making the Sabudana Vadas
- Combine the soaked sabudana, grated potatoes, crushed peanuts, green chillies, rock salt, sugar, cumin seeds, ginger, and chopped coriander leaves.
- Mix everything well using gentle pressure until it forms a dough-like consistency.
- Taste and adjust the seasoning if required.
- Grease your hands and shape the mixture into 7–8 equal balls. Flatten them slightly into vada shapes.
- Heat oil in a kadhai over medium heat.
- Test the oil by dropping a small portion of the mixture into it. It should rise to the surface without browning too quickly.
- If the test mixture breaks apart, add 1 tablespoon of flour to the mixture, combine well, and test again.
- Carefully slide the vadas into the hot oil. They may also be shallow fried if preferred.
- Do not overcrowd the pan and avoid disturbing the vadas until they become lightly golden.
- Turn them over and continue frying until both sides are crisp and evenly golden.
- The vadas will puff slightly and develop a crispy exterior.
- Drain on kitchen paper towels to remove excess oil.
- Serve hot with green chutney and cucumber raita.


Notes
- Avoid overcooking the potatoes, as excess moisture can make the vadas soggy.
- Proper soaking of the sabudana is essential for the correct texture.
- Always fry the vadas over medium heat. High heat may brown the outside quickly while leaving the inside undercooked.
