Vegan Fried Calamari (King Oyster Mushroom)

These delicious vegan fried calamari rings are made from King Oyster Mushrooms (Eryngii). Their texture closely resembles traditional calamari, making them crispy on the outside and tender and chewy on the inside. Perfect as an appetizer, snack, party food, or alongside your favorite beverage, this recipe delivers an authentic seafood-like experience without using any animal products.
Ingredients
- 1 large King Oyster Mushroom (Eryngii)
Ingredients for the Batter
- 3 tsp cornstarch
- 1–2 nori sheets
- ½ cup all-purpose flour
- 1 tsp chilli powder
- ½ tsp onion powder
- 1 tsp garlic powder
- Salt to taste
- ½ tsp black pepper powder
- 1 cup panko breadcrumbs or regular breadcrumbs mixed with salt and red chilli powder
Instructions
- Mix all the batter ingredients with enough water to make a smooth dipping-consistency batter.
- Keep the batter aside.
- Slice the stem of the King Oyster Mushroom into thick discs.
- Use a small cookie cutter or knife to remove the center and create mushroom rings.
- Reserve the mushroom caps for another recipe or slice them into strips to fry along with the rings.
- In another bowl, combine the breadcrumbs with salt and red chilli powder.
- Dip each mushroom ring into the prepared batter.
- Coat the battered rings evenly with the seasoned breadcrumbs, shaking off any excess.
- Heat oil for deep frying to 350°F–375°F (175°C–190°C).
- Deep fry the coated mushroom rings for 3–5 minutes or until golden brown and crispy.
- Transfer them to a paper towel to absorb excess oil.
- Avoid overcooking, as mushrooms cook very quickly.
- Your crispy Vegan Fried Calamari is ready to serve.
- Serve hot with lime wedges and spicy vegan mayonnaise (prepared by mixing vegan mayonnaise with Sriracha or any spicy chilli paste, a squeeze of lime juice, and a pinch of sugar).
