Green Peas Kachori

INGREDIENTS FOR PASTE

Ingredients for Paste

  • ½ tsp ghee or oil
  • 1 bowl green peas
  • Coriander leaves
  • Little ginger
  • Few green chillies

INSTRUCTIONS

  • Heat ghee or oil in a pan.
  • Roast the green peas for a few minutes without adding water.
  • Grind the coriander leaves, ginger and green chillies into a smooth paste.
  • Allow the peas to cool and grind (or pound) them into a coarse paste.

INGREDIENTS FOR FILLING

Ingredients for Filling

  • 1 tsp ghee or oil
  • ½ tsp cumin seeds
  • 2 pinches hing (asafoetida)
  • 1 tsp coriander powder
  • 1 tsp Kashmiri red chilli powder
  • ½ tsp chilli flakes
  • ¼ tsp turmeric powder
  • 1 tsp amchur (dry mango) powder
  • ½ tsp roasted cumin powder
  • ½ tsp garam masala powder
  • Salt to taste
  • 1 tsp fennel seed powder
  • 2 tsp besan
  • ½ tsp sugar
  • Water as needed

INSTRUCTIONS

  • Heat ghee or oil in a pan and add cumin seeds and hing.
  • Add all the spice powders and roast on low heat.
  • Add besan and continue roasting for 3–4 minutes until aromatic.

Adding Green Peas Paste

  • Add the coarse green peas paste and the coriander paste.

Preparing Filling

  • Continue roasting for a few more minutes.
  • Add sugar and mix well.
  • Remove from heat and let the filling cool.

Ingredients for Dough

INGREDIENTS FOR DOUGH

  • 2 cups maida (all-purpose flour)
  • Salt to taste
  • ¼ cup oil
  • Water as required

INSTRUCTIONS

  • Mix the flour, salt and oil in a bowl.
  • Rub the mixture well using your palms.

Preparing Dough

  • Add water gradually and knead into a soft dough.
  • Brush the dough with a little oil.
  • Rest it for 30–45 minutes.
  • Knead again with a little oil.
  • Make dough balls slightly larger than the prepared filling balls.

Stuffing Kachoris

LET’S MAKE KACHORIS

  • Flatten each dough ball with your hands.
  • Place one green peas filling ball inside and shape it carefully.

Preparing Kachori Balls

  • Remove any excess dough if needed.
  • Prepare all the stuffed kachori balls.

Heating Oil

  • Heat oil in a kadhai over very low heat for about 3–4 minutes.
  • Flatten each stuffed kachori gently between your palms.

Frying Kachoris

  • Add 4–5 kachoris to the oil with the sealed side facing down.

Cooking Kachoris

  • Gently move the kachoris after a few minutes.
  • Turn them only after they float to the surface.

Golden Green Peas Kachoris

  • Fry until golden brown on both sides (about 20 minutes per batch).
  • Remove from the oil.
  • Switch off the heat and let the oil cool slightly before frying the next batch.
  • Your delicious Green Peas Kachoris are ready.

Serving Suggestion

  • Serve hot with adrak wali chai, chutney or aloo ki sabzi.
