Methi Muthiya

Homemade Delicious Methi Muthiya (Fried Dumplings made with Fenugreek Leaves) is a traditional Gujarati tea-time snack served with masala chai and chutney. It also makes a wonderful addition to dishes like Surti Undhiyu.
Ingredients
- 2 cups methi (fresh fenugreek leaves), washed and chopped
- 2 tsp green chili paste
- 2 tsp garlic paste
- 2 tsp ginger paste
- Salt to taste
- 2 tsp white sesame seeds
- 2 tbsp curd (plain yogurt)
- ½ tsp hing (asafoetida)
- ¼ tsp turmeric powder
- 1½ tbsp granulated sugar
- 1½ cups wheat flour
- ½ cup besan (chickpea flour)
- 2–3 tbsp oil
- Oil for deep frying

Instructions
- Wash, clean, and finely chop the methi leaves.
- Transfer the chopped methi to a large mixing bowl.
- Add the ginger paste, garlic paste, and green chili paste.
- Add salt, sesame seeds, hing, and turmeric powder.
- Mix everything well.
- Add the sugar and curd.
- Mix thoroughly with your hands until the sugar dissolves.
- Add 2 tbsp oil and mix well.

- Now add the wheat flour and besan.
- Mix everything together with your hands to form a dough.

- No additional water is needed as the curd, methi, and oil provide enough moisture. If necessary, sprinkle only a few drops of water.
- Add another teaspoon of oil and knead the dough until smooth.
- The dough should be firm, not soft.
- Cover and let the dough rest for 15–20 minutes.
- Lightly grease your palms with oil.
- Shape the dough into cylindrical muthiyas.

Cooking
- Heat oil for deep frying.
- The oil should not be extremely hot, otherwise the muthiyas will brown quickly without cooking inside.
- Fry the muthiyas over low to medium heat.
- Cook until they are evenly browned and crispy.
- Your delicious Methi Muthiya is ready to serve.
