Methi Muthiya

Homemade Delicious Methi Muthiya (Fried Dumplings made with Fenugreek Leaves) is a traditional Gujarati tea-time snack served with masala chai and chutney. It also makes a wonderful addition to dishes like Surti Undhiyu.

Ingredients

  • 2 cups methi (fresh fenugreek leaves), washed and chopped
  • 2 tsp green chili paste
  • 2 tsp garlic paste
  • 2 tsp ginger paste
  • Salt to taste
  • 2 tsp white sesame seeds
  • 2 tbsp curd (plain yogurt)
  • ½ tsp hing (asafoetida)
  • ¼ tsp turmeric powder
  • 1½ tbsp granulated sugar
  • 1½ cups wheat flour
  • ½ cup besan (chickpea flour)
  • 2–3 tbsp oil
  • Oil for deep frying

Ingredients for Methi Muthiya

Instructions

  1. Wash, clean, and finely chop the methi leaves.
  2. Transfer the chopped methi to a large mixing bowl.
  3. Add the ginger paste, garlic paste, and green chili paste.
  4. Add salt, sesame seeds, hing, and turmeric powder.
  5. Mix everything well.
  6. Add the sugar and curd.
  7. Mix thoroughly with your hands until the sugar dissolves.
  8. Add 2 tbsp oil and mix well.

Mixing the Dough

  1. Now add the wheat flour and besan.
  2. Mix everything together with your hands to form a dough.

Preparing Muthiya

  1. No additional water is needed as the curd, methi, and oil provide enough moisture. If necessary, sprinkle only a few drops of water.
  2. Add another teaspoon of oil and knead the dough until smooth.
  3. The dough should be firm, not soft.
  4. Cover and let the dough rest for 15–20 minutes.
  5. Lightly grease your palms with oil.
  6. Shape the dough into cylindrical muthiyas.

Frying Methi Muthiya

Cooking

  1. Heat oil for deep frying.
  2. The oil should not be extremely hot, otherwise the muthiyas will brown quickly without cooking inside.
  3. Fry the muthiyas over low to medium heat.
  4. Cook until they are evenly browned and crispy.
  5. Your delicious Methi Muthiya is ready to serve.
