
INGREDIENTS
- 2 cups cooked rice
- 1 lb chicken breast, cut and marinated with little curry powder and salt
- 2 tbsp garlic paste
- 1 tsp ginger paste
- 2-3 tbsp curry powder (I’ve used BaBa brand)
- Little kimchi, cut
- ¼ cup carrots, chopped
- ¼ cup bell pepper, chopped
- ¼ cup onion, chopped
- ¼ cup corn, cooked
- ½ cup cabbage, sliced
- Spring onion, chopped
- Soya sauce
- Korean chilli flakes
- Salt and pepper to taste
- Oil
INSTRUCTIONS
- Heat oil in a pan.
- Add chilli flakes, garlic, ginger, chicken and carrots. Fry well.
- Add the remaining vegetables and sauté for a few more minutes.
- Add kimchi.
- Add curry powder and mix well.

- Add soya sauce, salt and pepper.
- Add cooked rice and toss everything well.

- That’s it, your healthy and delicious Kare Bokkeumbap is ready.

- Garnish with spring onion and serve hot with cucumbers.
