Ingredients
- 1½ cups all-purpose flour (maida), sieved
- 1 cup dahi (yogurt)
- ¾–1 cup granulated white sugar
- ½ cup oil
- 1¼ tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla essence
- ½ cup tutti frutti
- 1 tbsp raisins (optional)
- Pinch of salt
Instructions
- Preheat the oven to 180°C.
- In a small bowl, toss the tutti frutti and raisins with 1 tbsp of maida. This helps keep them evenly distributed throughout the cake and prevents them from sinking to the bottom.

- In a medium bowl, combine the dahi and sugar until well mixed.
- Add the baking soda and baking powder and let the mixture rest for 5–10 minutes.
- Add the vanilla essence, a pinch of salt and the oil.
- Gradually add the sieved maida in batches.
- Mix gently with a spatula.
- Do not overmix.
- Fold in the tutti frutti and raisin mixture.

- Mix until everything is just combined.
- Pour the batter into a greased loaf pan.

- Bake at 180°C for 45–50 minutes, or until a toothpick inserted into the centre comes out clean.

- Remove the cake from the oven and allow it to cool on a wire rack.
- Slice and serve.
- Your soft and delicious vegetarian Tutti Frutti Cake is ready.

- Enjoy with tea or coffee.

Enjoy!
