

INGREDIENTS
- 2 onions, sliced
- 10 dry chillies
- 2–3 tomatoes
- Small piece of ginger
- 15 cloves garlic
- Curry leaves
- Coriander leaves
- Pinch of turmeric
- ½ tsp chilli powder
- ¼ tsp mustard seeds
- ¼ tsp urad dal
- Salt to taste
- Gingelly oil
INSTRUCTIONS

- Heat gingelly oil in a pan.
- Add the dry chillies, ginger, garlic and curry leaves.
- Add the sliced onions and cook until about 40% done.

- Add the tomatoes and sauté well.

- Add turmeric powder and salt.
- Add coriander leaves and mint leaves (optional).
- Add chilli powder and sauté for 1 minute.
- Allow the mixture to cool and grind it into a fine paste.

- Add water if required to adjust the consistency.
- Heat oil in a tadka pan.
- Add urad dal, fried dry red chillies, curry leaves and mustard seeds.
- Once they splutter, add the chutney and sauté for a minute until everything is well combined.

- That’s it! Your authentic Kaara Chutney is ready.
