Ingredients for Chicken Filling

INGREDIENTS FOR CHICKEN FILLING

  • 500 gms boneless chicken, cut into thin strips
  • Salt and pepper
  • 1 tsp ginger garlic paste
  • ½ tsp vinegar
  • 2 tbsp oil
  • 2-3 onions, finely sliced
  • 2 tbsp ginger-garlic paste
  • 2-3 green chillies
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tbsp Shilpa’s Masala Mill Kashmiri Chilli Powder
  • 1-2 tbsp Shilpa’s Masala Mill Frankie Masala
  • 1-2 tbsp vinegar
  • Water
  • ½ tsp Shilpa’s Masala Mill Garam Masala Powder
  • Chopped coriander leaves

INSTRUCTIONS

  • Marinate chicken with 1 tsp ginger-garlic paste, vinegar, salt and pepper for an hour.
  • Heat oil in a pan.
  • Add onions, ginger-garlic paste and green chillies and fry for 3-4 minutes.

Cooking Step

  • Add the powdered masalas and fry.
  • Add the marinated chicken and sauté for 5-6 minutes.

Cooking Step

  • Add water, vinegar and garam masala and bring to a boil.
  • Cover and simmer for 4-5 minutes.
  • That’s it, your Frankie masala for filling is ready.

Frankie Roti Ingredients

  • Garnish with coriander.

INGREDIENTS TO MAKE FRANKIE ROTI

  • 2 cups maida
  • ½ tsp salt
  • ¼ cup dahi
  • 2 tbsp oil
  • Water as needed

INSTRUCTIONS

  • Mix everything except oil.
  • Add water gradually and knead the dough.
  • Knead to a soft and stretchy dough.
  • Add oil and knead again for 3-4 minutes.
  • Cover with a damp cloth and rest aside for an hour.
  • Divide dough into equal size dough balls.
  • Roll it out into a slightly thick roti (you can use dry flour to coat it before rolling it out).
  • Repeat for all the dough balls.
  • Set a tavaa on medium-high heat.
  • Add a little oil and cook the roti briefly on both sides for around 30-40 seconds each.
  • Make as many half-cooked rotis as needed.
  • Keep them covered in an insulated casserole or cloth.
  • Use when you are about to make the Frankie.

LET’S MAKE CHICKEN FRANKIE

  • Beat eggs in a bowl with salt and pepper.
  • Set a tavaa on medium-high heat.
  • Add a little butter.
  • Fry the half-cooked roti until golden on both sides.
  • Now pour the beaten whisked eggs over one side of the roti and cook until the eggs are done.

Assembling Frankie

  • Now remove from the tavaa.
  • Sprinkle Frankie Masala on the roti.
  • Add the prepared chicken filling.

Serving Suggestion

  • Top off with green chillies, onions and capsicum.
  • Fold it into a rolled roti shape.
  • That’s it, your Street Style Classic Chicken Frankie is ready.
  • I’ve put my homemade Schezwan chutney to one of the rotis to make a variation.
  • Enjoy.
