This restaurant-style Dal Tadka is made using a combination of toor dal, masoor dal, and chana dal. It is finished with a flavorful onion and ghee tempering, making it a comforting dish that’s perfect with butter naan, tandoori roti, or steamed rice.

Ingredients for Cooking the Dal

- ¼ cup arhar dal (tuvar dal)
- ¼ cup red masoor dal
- 1–2 tbsp chana dal
- Salt to taste
- ¼ tsp turmeric powder
Instructions
- Wash and soak all the dals for 30–40 minutes.
- Pressure cook them with salt and turmeric powder for 2–3 whistles.
- Allow the cooked dal to cool and keep it aside.
Ingredients for Preparing the Dal

- 2–3 tbsp oil or ghee
- 1 tbsp cumin seeds
- 1 medium onion, chopped
- 1–2 tomatoes, chopped
- 5–6 garlic cloves, made into a paste
- 2–3 inch ginger, made into a paste
- 1–2 tsp hot chili powder
- 1 tsp Shilpa’s Masala Mill Kashmiri Chilli Powder
- 1–2 tsp coriander powder
- Chopped coriander leaves
Instructions
- Heat oil or ghee in a kadhai.
- Add the cumin seeds and let them splutter.
- Add the ginger and garlic paste. Fry for 1 minute.
- Add the chopped onions and fry until golden brown.
- Add the chopped tomatoes and cook until they soften and the oil begins to separate.
- Add the hot chili powder, Kashmiri chili powder, and coriander powder.
- Fry for about 1 minute.
- Add the cooked dal and mix well.

- Simmer for 3–5 minutes.
- Adjust the seasoning if required.
- Add chopped coriander leaves and switch off the heat.
Tempering (Tadka)

- 2–3 tbsp ghee (or oil)
- ½ tsp cumin seeds
- 2–3 dry red Kashmiri chilies
- ½ onion, finely sliced
- ½ tsp garam masala
- Pinch of hing (asafoetida)
- 1–2 tsp red chili powder
- Chopped coriander leaves
Instructions
- Heat the ghee in a pan.
- Add cumin seeds and let them splutter.
- Add hing, sliced onions, and dry red Kashmiri chilies.

- Cook on medium-low heat until the onions turn golden brown.
- Add the red chili powder and a little chopped coriander.

- Switch off the heat and pour the tempering over the dal.
- Garnish with chopped coriander leaves and a little garam masala.
- Your restaurant-style Dal Tadka is ready.

Enjoy with butter naans, tandoori rotis, or steamed rice.
