
Tandoori Paneer Sandwich and Rose Flavoured Lassi.
Perfect evening snack.
Spicy Tandoori cottage cheese with chutney sandwiches paired beautifully with sweet Rose Lassi.
INGREDIENTS:

- 1-2 tbsp mustard oil
- 1 tbsp chili powder
- 1 tsp coriander powder
- ½ tbsp cumin powder
- 1 tsp Shilpa’s Masala Mill Garam Masala
- ½ tsp amchur powder (mango)
- ¼ tsp black pepper powder
- 1 tbsp ginger garlic paste
- ½ cup thick curd (hung curd)
- 250 gms paneer, cubed
- 1-2 tbsp roasted besan
- ½ tsp lemon juice
- Salt to taste
- Green chutney
- Slices of cheese (optional)
- 4-6 slices of bread
- 1 tbsp ghee (or oil)
- Butter
- 1 medium capsicum, cubed
- 1 medium onion, cubed
- 1 medium tomato, cubed (reduce seeds)
INSTRUCTIONS
- In a bowl, add mustard oil and all the powdered spices. Mix well.
- Now add the hung curd, ginger garlic paste, roasted besan and lemon juice.
- Mix well until a smooth batter. Consistency should be thickish. (If too thick add more yogurt, if too thin add more besan.)
- Add all the vegetables and paneer.

- Mix and marinate for an hour.

- Now heat up some ghee in a pan.
- Add the marinated tandoori paneer mixture.
- Sauté for 8-10 minutes until masala cooks.

- Switch off the gas. The tandoori paneer masala is ready.
- Cool the mixture to make sandwiches.
- Butter the bread.
- Add chutney.
- Add the tandoori paneer masala.

- Add a slice of cheese.
- Close the sandwich.
- Heat a skillet or tavaa.
- Lightly butter sandwich and place the buttered side down in the tavaa.
- Toast until golden brown pressing the sandwich down few times.
- Flip and toast the other side.
- That’s it.

I’ve served it with Rose-flavored Lassi (blend together yogurt, sugar and rose syrup. Add ice cubes. Rose Lassi is ready).
